Apr ’16: 青梅

在市場看到有梅子買,決定自製青梅酒和青梅醬~~

材料比例:
青梅,冰糖,米酒 (1:0.5:1)

做法:
青梅用牙籤將蒂頭條走,之後用冷開水洗淨
洗淨後放置在陰涼地方吹乾
吹乾後將青梅一粒一粒放入玻璃瓶內,逐少加入碎冰糖,倒入米酒,酒要將青梅浸過面
青梅酒置陰涼處,每天稍為轉轉瓶子,浸2~3個月即可飲用

自製青梅醬
有些梅子有破損,不宜浸酒,生吃卻太酸且很苦澀,那就把爛的地方切走,做成梅子果醬吧~

材料:
青梅,蜂糖

做法:
梅子清洗後浸在鹽水去掉苦澀味
梅子放在鍋中,加入蜂糖,中火煮至蜂糖全部融化,不停輕輕攪拌,去核後再收小火煮至色澤稍微變深變濃即可入瓶,趁熱入瓶,倒置冷卻

We used the wrong type of flour (whole wheat flour…. Ended up with a bitter crust) and we reduced too much sugar so it was very sour ><

INGREDIENTS
Crust
1 cup of flour
2 tablespoons sugar [Reduced to 1 Tbsp]
½ cup unsalted butter, softened
½ teaspoon salt

Filling
¾ cup sugar [Reduced to 5 Tbsp]
¼ cup flour [Reduced to 3 Tbsp]
4 eggs [Used 3 eggs]
The juice and zest of 4 lemons [Used 3 lemons]

Topping
Powdered sugar for dusting [ommited]

INSTRUCTIONS
Preheat oven to 350 degrees F.

Prepare crust: In a medium bowl, stir together flour, sugar, and salt. Gentle combine with softened butter (I used my hands for this step). Press into the bottom of a 9×9 inch pan. Bake until crust is firm and golden brown, about 20-25 minutes. Set aside.

In another medium bowl, whisk together the sugar and flour for the filling. Whisk eggs in one egg at a time. Whisk in lemon juice and zest. Pour mixture over baked crust.

Bake for 30 minutes, bars will firm up while they cool. Let cool completely. Dust with powdered sugar and serve.

YIELD: 5x9x3-inch loaf pan (this needs a small loaf pan)

INGREDIENTS:

  • 6 tablespoons butter
  • 2/3 cup granulated sugar [Reduced to ½ cup]
  • 4 egg yolks [Used 2 eggs]
  • 1 1/4 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1/3 cup milk
  • 2 teaspoons finely grated lemon peel
  • 2 teaspoons lemon juice
  • 1/2 teaspoon vanilla extract

PROCEDURES

  1. Heat oven to 350 degrees.
  2. Butter and flour a 5x9x3-inch loaf pan.
  3. In a mixing bowl, cream the butter with sugar until light and fluffy.
  4. Separate the mixture to the side of the bowl, leaving an opening in the middle.
  5. Add the egg yolks and beat just the yolks until light and lemon colored.
  6. Work the yolks into the creamed mixture.
  7. Sift together the flour, baking powder and salt.
  8. Gradually add flour mixture to the first mixture, alternating with the milk.
  9. Beat well.
  10. Blend in the lemon zest and juice and the extract.
  11. Spoon batter into the prepared loaf pan.
  12. Bake about 45 to 50 minutes. (Make sure and check at 40 mins just in case!)
  13. Cool in pan on rack for about 45 minutes.
  14. Remove from pan and cool thoroughly.
  15. Pour lemon sauce on top.
